Classic Berry Shortcakes
Tender, craggy-topped biscuits split and piled with macerated berries and softly whipped cream. Old-fashioned in the best way.

Ingredients
- 2 1/2 cups all-purpose flour
- 1/3 cup sugar, plus more for sprinkling
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 3/4 cup cold butter, cubed
- 1 cup cold heavy cream, plus 2 tablespoons for brushing
- 6 cups mixed berries (strawberries, blueberries, blackberries)
- 3 tablespoons sugar, for the berries
- 1 1/2 cups heavy cream, whipped with 2 tablespoons powdered sugar

Heat the oven to 400°F and line a sheet pan with parchment.

Whisk the flour, sugar, baking powder, and salt. Cut in the butter until the pieces are the size of peas.

Stir in the cold cream just until a shaggy dough forms. Pat 1 inch thick and cut into 8 rounds.

Brush the tops with cream, sprinkle generously with sugar, and bake 16 to 18 minutes until golden.

Meanwhile, toss the berries with the 3 tablespoons sugar and let them sit 20 minutes to draw out their juices.

Split the warm shortcakes, spoon on the berries and their syrup, and finish with whipped cream.
Kitchen Note
The unbaked rounds freeze well — bake straight from frozen, adding 3 or 4 minutes.
