Lemon Herb Shrimp Pasta
A weeknight dinner that tastes like a restaurant plate: lemon, garlic, plenty of herbs, and shrimp cooked just until they curl.

Ingredients
- 12 oz farfalle or linguine
- 1 1/4 lbs large shrimp, peeled and deveined
- 4 tablespoons butter
- 2 tablespoons olive oil
- 4 garlic cloves, thinly sliced
- Zest and juice of 2 lemons
- 1/2 cup heavy cream
- 1/3 cup grated Parmesan
- 1/4 cup chopped parsley
- 1 tablespoon fresh thyme leaves
- Kosher salt and cracked pepper

Boil the pasta in well-salted water until just shy of al dente. Reserve 1 cup of the cooking water before draining.

Pat the shrimp dry and season with salt and pepper. Sear in the olive oil over medium-high heat, about 90 seconds per side, then set aside.

Lower the heat, melt the butter, and cook the garlic and thyme until fragrant, about 1 minute.

Add the lemon zest, juice, and cream. Simmer 2 minutes, then stir in the Parmesan.

Toss in the pasta with a splash of the cooking water until the sauce clings, then fold the shrimp and parsley back in.

Finish with more lemon zest and cracked pepper and serve right away.
